(Cocoa chocolate mousse layered with an almond sponge cake covered in a chocolate glaze.)

Royal
(Cocoa chocolate mousse layered with chocolate sponge cake and crispy praline.)

Opera
(Almond sponge cake layered with cocoa chocolate mousse and coffee-flavored butter cream glazed with chocolate.)

Tartelette aux Framboises
(Tarte filled with almond paste and covered with fresh raspberries)

Tartelette aux Fruits
(Shortbread crust covered with a handmade vanilla pastry cream and topped with fresh fruits. Your choice of strawberries, blueberries, or an assortment of fruits.)

Tartelette au Citron
(Classic lemon tarte topped with Italian meringue. Also available without meringue.)

Tartelette aux Poires
(Tarte filled with almond paste and covered with pears.)

Mousse de Fruits
(Fruit mousse layered with almond sponge cake. Your choice of strawberry, raspberry, mango, or coconut flavored mousse.)

Mini Eclairs au Chocolat
(Choux dough filled with cocoa chocolate custard and topped with chocolate fondant.)

Mini Eclairs a la Pistache
(Choux dough filled with pistachio flavored custard and topped with fondant.)

Choux a la Crème
(Choux dough cut in half and filled with homemade vanilla whipped cream.)

Meringue
(Sweet and airy dessert made with sugar and whipped egg whites.)

Paris Brest
(Choux dough cut in half and filled with a praline-flavored cream, garnished with sliced almonds.)

Religieuses
(Choux dough filled with vanilla or chocolate pastry cream and topped with fondant.)

Financier
(Light teacake (similar to sponge cake) with almond flavoring.)

Chouquettes
(A puff pastry or choux dough sprinkled with sugar.)
